Development of the Ukrainian Vegetable Market: Changes in Borscht Set Prices and Agricultural Products this Season

Chas Pravdy - 02 November 2025 12:25

The prices for key vegetables used in Ukrainian borscht have experienced slight changes compared to last year’s figures.

According to analysts, including Maxim Hopka from the Ukrainian Agribusiness Club, this season shows a modest decrease in the cost of some vegetables, such as potatoes, while onion prices have slightly increased.

By the end of October, potatoes became more affordable, costing between 10-12 hryvnias per kilogram, which is lower than the previous year.

These changes are largely driven by more favorable weather conditions in 2024 and an abundant harvest.Experts point out that regional diversity in vegetable cultivation has increased significantly, partly due to the loss of the southern regions of Ukraine from leading positions because of military actions.

Climate changes are also enabling the cultivation of crops previously considered atypical for certain regions.

While prices for cabbage and root vegetables like carrots and beets have decreased slightly, they are expected to remain relatively stable until new harvests appear and stocks are replenished.

Additionally, the rise in the price of onions, which sold for 7-13 hryvnias per kilogram at the end of October, is noted; experts predict a further increase during winter.Overall, Ukraine’s vegetable market shows positive dynamics and adaptation to new climatic and economic realities, which benefits consumers through more stable prices with potential increases during the cold months.
